Arugula Chicken
This is a new favorite meal.
- Put olive oil, salt, and pepper on potatoes and garlic cloves and cook in oven at 375 degrees.
- Sautee the chicken in olive oil, slat, and pepper.
- Chop arugula and add olive oil, salt, pepper, and fresh lemon juice.
- Put sautéed chicken over potatoes and cover with arugula.
Chicken Parmesan
This is always a favorite.
- Coat chicken cutlets in egg (if permitted on your diet)
- Cover with breadcrumbs and fry
- Add sauce and cheese and then bake until melted
Sliders
This is a quick weeknight meal.
- Grill sliders (we used the grill part of our airfryer)
- Bake the french fries.
- Pickles are from a local farmers market.
Chicken Marsala
This meal sounds so elaborate but it is actually simple to make.
- Lightly coat cut chicken with corn starch.
- Cook it in a skillet with oil.
- Add marsala wine with some more corn starch to thicken it.
- Mushrooms are sautéed separately in Marsala wine.
- Serve over rice noodles which take minutes to boil.
Stuffed Mushrooms with Chicken Cutlets
I have not had stuffed mushrooms since prior to my diagnosis because we used to use stuffing. We gave this a try and they were just as good.
- Remove stems from mushrooms and fill with bread crumbs.
- Melt some butter and add balsamic vinegar; drizzle over mushrooms.
- Bake mushrooms at 350 for approximately 20 minutes.
- Coat chicken with bread crumbs and bake in oven until cooked through.
- Add arugula and enjoy!
Corn Flake Chicken
Cornflake chicken only consists of five main ingredients; chicken breasts, cornflakes, Wishbone Italian dressing, gluten free pasta, and truffle salt. For a vegetable, I enjoy broccoli or brussel sprouts topped with truffle salt. To enhance the pasta, add some of the Italian dressing.
- Bathe chicken breasts in Italian dressing.
- Coat chicken in crushed cornflakes.
- Bake at 375 degrees.
Shrimp Scampi
This meal is actually quick to make.
- Raw shrimp is sauteed in Earth Balance butter, minced garlic, white cooking wine, and lemon juice.
- Broccoli is steamed.
- Shrimp and broccoli are put over spaghetti.
Pizza Bagels
This is comfort food.
- Lightly toast bagels.
- Spread sauce, add cheese, sprinkle Italian seasoning.
- Toast again until cheese is melted (dairy free cheese takes a while to melt).
Pasta with meat sauce
- Add Italian seasoning and garlic to raw meat.
- In a skillet fully cook the meat; Add sauce.
- Serve over freshly cooked pasta.
Gluten, Dairy, Egg, Soy free pizza
Buffalo Wings
- Rub each wing with a good amount of buffalo sauce.
- Preheat oven to 350 degrees and cook wings for 15 minutes.
- While waiting for the wings to cook, you can cut up a cucumber or another vegetable of your choice.
