This is a new favorite meal.

  1. Put olive oil, salt, and pepper on potatoes and garlic cloves and cook in oven at 375 degrees.
  2. Sautee the chicken in olive oil, slat, and pepper.
  3. Chop arugula and add olive oil, salt, pepper, and fresh lemon juice.
  4. Put sautéed chicken over potatoes and cover with arugula.

Chicken Parmesan

This is always a favorite.

  1. Coat chicken cutlets in egg (if permitted on your diet)
  2. Cover with breadcrumbs and fry
  3. Add sauce and cheese and then bake until melted

This is a quick weeknight meal.

  1. Grill sliders (we used the grill part of our airfryer)
  2. Bake the french fries.
  3. Pickles are from a local farmers market.

Chicken Marsala

This meal sounds so elaborate but it is actually simple to make.

  1. Lightly coat cut chicken with corn starch.
  2. Cook it in a skillet with oil.
  3. Add marsala wine with some more corn starch to thicken it.
  4. Mushrooms are sautéed separately in Marsala wine.
  5. Serve over rice noodles which take minutes to boil.

I have not had stuffed mushrooms since prior to my diagnosis because we used to use stuffing.  We gave this a try and they were just as good.

  1. Remove stems from mushrooms and fill with bread crumbs.
  2. Melt some butter and add balsamic vinegar; drizzle over mushrooms.
  3. Bake mushrooms at 350 for approximately 20 minutes.
  4. Coat chicken with bread crumbs and bake in oven until cooked through.
  5. Add arugula and enjoy!

Cornflake chicken only consists of five main ingredients; chicken breasts, cornflakes, Wishbone Italian dressing, gluten free pasta, and truffle salt. For a vegetable, I enjoy broccoli or brussel sprouts topped with truffle salt. To enhance the pasta, add some of the Italian dressing.

  1. Bathe chicken breasts in Italian dressing.
  2. Coat chicken in crushed cornflakes.
  3. Bake at 375 degrees.

Shrimp Scampi

This meal is actually quick to make.

  1. Raw shrimp is sauteed in Earth Balance butter, minced garlic, white cooking wine, and lemon juice.
  2. Broccoli is steamed.
  3. Shrimp and broccoli are put over spaghetti.

Pizza  Bagels

This is comfort food.

  1. Lightly toast bagels.
  2. Spread sauce, add cheese, sprinkle Italian seasoning.
  3. Toast again until cheese is melted (dairy free cheese takes a while to melt).

Pasta with meat sauce

  1. Add Italian seasoning and garlic to raw meat.
  2. In a skillet fully cook the meat; Add sauce.
  3. Serve over freshly cooked pasta.

Buffalo Wings

  1. Rub each wing with a good amount of buffalo sauce.
  2. Preheat oven to 350 degrees and cook wings for 15 minutes.
  3. While waiting for the wings to cook, you can cut up a cucumber or another vegetable of your choice.
